Product Details

Pectic enzyme is a protein that works to break down pectin in fruit, thus avoiding "milky" pectin haze in the finished product. Very useful when added directly to crushed fruit to aid in juice extraction, especially grapes, apples, pears, etc.

Usage rate: 1/2 teaspoon per gallon of juice prior to start of fermentation.

Look, I thought I was making cherry wine, but apparently I was just making murky fruit soup. Enter pectic enzyme, the unsung hero of home winemaking. It walked into my carboy like a boss, broke down all the emotional (and cellular) walls my cherries were hiding behind, and left me with more juice, more flavor, and a wine so clear I could see my reflection — and question my life choices. If you like your wine not looking like swamp water, this is the good stuff. Would I recommend it? Absolutely. Would I name my next pet “Pectinase”? …Probably.
