This fine aroma hop has developed quite the cult following since its release in 2002. Saphir's parents are two proprietary breeds from the Hop Research Center in Hüll, Germany. The initial goal of its creators was to produce a more commercially viable alternative to Hallertau Mittelfrüh through increased disease resistance and the retention of Hallertau’s noble characteristics. In that capacity, Saphir would most certainly be considered a success.

It is a noble-like variety with a low Cohumulone content (12-17% of AA) and mild bittering. It has a complex character that is a perfect balance between the spice, floral, and fruity elements sought after in German varieties.

Saphir features elements of spice and fruit amid refined citrus notes of tangerine. It is considered well suited to Belgian Whites as well as Pilsners and German Lagers.

Aroma: Sweet citrus aromas with hints of tangerine. juniper, lemongrass, bergamot, strawberry, and black tea

Sensory: Strongly but pleasantly spicy with sweet, fruity overtones (citrus, red berries). Mild and approachable in the “noble hop” sense.

Styles: Belgian ales, Weissbiers, farmhouse ales, as well as traditional continental lagers
